Treat Yourself! Coffee Brownies

At last, the weekend is upon us! And soon, very soon you'll be packing up the kids and shipping them off to school if you haven't already. With that in mind, I propose a little brain food, for both you and the little buggers. Find out what happens when you combine coffee and brownies! For this recipe you're going to need:

  • 8 Tablespoons of Ground Coffee
  • 1/2 Cup of Water
  • 4 1/2 oz of Unsweetened Chocolate
  • 1 1/2 Sticks of Butter
  • 1 3/4 Cups of Sugar
  • 3 Eggs
  • 1 Teaspoon of Vanilla Extract
  • 1 Cup of Flour

Start of course by preheating your oven to 300 degrees and preparing a double boiler pot if you have one (if not you can use the microwave). In the mean time, prepare the rest of your ingredients. Using your coffee maker (any kind that makes drip will do), prepare 1/2 a cup using 8 tablespoons of ground coffee, then, combine the grounds and the coffee into a large, microwave safe bowl.

If you do have a double boiler, use it to melt your chocolate while you melt your butter in a separate pan on the stove, when both are completely melted, combine them with the coffee and grounds. If you don't have a double boiler, microwave the butter and chocolate along with the coffee uncovered on high for 2 to 4 minutes, stirring occasionally until everything has melted.

Next, stir in your sugar and whisk in your eggs and vanilla until everything is mixed thoroughly. Finally, add your flour and mix it in completely, when you have, pour the batter into a 9 inch square pan and bake for 50-55 minutes or longer if needed. Stick a toothpick into your brownies and pull it out;  if it comes out clean you know that your brownies are done. Allow them to cool and you'll be good to go!

I always add brewed coffee in place of some or all of the water. It really brings out the chocolate flavor.
